Jamie Oliver Challenge Week 5

For week 5 we made two Jamie Oliver Meals.  The one above is a broccoli pasta salad from Jamie Oliver's Food Revolution, and the one below is the Asian Chicken Soup, also from Food Revolution

What I love about Jamie Oliver is that everything he makes uses fresh ingredients, pretty easy to manager and super healthy for you!  His food still has tons of flavor without high fats and sugars!

A New Years Challenge

Jamie Oliver's Pork Tacos (15 Minute Meals)
This year among other promises to myself (eat healthy, exercise, blah blah blah), I decided that I am going to make one Jamie Oliver recipe each week for the whole year!  We now own about 7 of his cookbooks, so there really is no excuse!

So far We have made 3 delicious and there's so much more to come, I can't wait!  Did you set a new years challenge for yourself?

Homemade Ranch Dressing

Y'know how when the new year rolls around and you really try to do things right this time?  Well so far so good!  For some reason over the past little while I have just been disgusted with store bought salad dressings.  I'm no sure why, but it could be the way it congeals on the outside of the lid when you close it...gross!

I decided it was time to attempt my own.  I LOVE ranch dressing and so I went on a search to find the right one.  I found it in my Dairy Free cookbook and adapted it a little bit.

Homemade Ranch Dressing (adapted from "Go Dairy Free" 5 Star Ranch Dressing recipe)
Ingredients:

1/3 cup milk *note that the go dairy free cookbook uses a milk substitute like soy or almond milk, I chose to use real milk instead
1 tsp. lemon juice
1 cup yogurt (plain or greek if you would like it to be thicker) *note that the go dairy free cookbook uses mayonnaise here buy I decided to try yogurt instead
2 tsp. fresh parsley
1/4 tsp. garlic powder
1/2 tsp. onion powder
1/8-1/4 tsp. black pepper
1/8 tsp salt

Instructions:
Combine lemon juice and milk in a bowl and let it sit for 5-10 minutes.  This will cause the milk to sour like you want it to.   Combine all other ingredients together in a bowl and whisk in the milk until smooth.  Put into sealable container (I used a mini jar) and refrigerate about 30 minutes before serving.

Enjoy!

Wore Stories: Black and white and green all over

I can't believe I didn't realize this sooner, but it's SO easy to take outfit pictures with my iPhone!  SO I'm hoping that this will become a more frequent feature on my blog again (YAAAY!)  So here's what I wore on this snowy snowy Sunday.

Photo edited on the #abeautifulmess app

Bottoms up:
Boots-Le Chateau // Tights-American Apparel // Dress-H&M // Belt-F21 // Necklace-Shop Holly Dolly

PS. Yes, I am freezing my buns off in this photo, it is -13 degrees Celsius, and while that is nicer than normal at this time of year, I AM a crazy person for being short sleeved and un-jacketed in this temperature!

Stay warm!  More coming soon!
